Steam is the most reliable indicator, a waffle is done when the steam escaping from the iron has reduced to almost nothing. At the start of cooking: significant steam exits the hinge. As moisture leaves the batter: the steam reduces. When the iron is nearly silent with minimal steam: the waffle is done. The done indicator light on mid-range models is calibrated to this moment. For budget models without a done light: watch the steam and lift a corner of the waffle to check browning at the 4-minute mark. The waffle should release cleanly without sticking, if it sticks, it is not done (the proteins have not yet set fully).
For non-stick waffle irons: no, not for every waffle, the first waffle of the session may stick if the plates are cold, so light brushing with oil or cooking spray before the first waffle prevents this. Subsequent waffles in the same session release without greasing if the recipe includes adequate fat (oil or butter). For cast iron stovetop waffle irons: yes, light oil before every waffle. Never spray aerosol cooking spray (PAM) directly onto a non-stick waffle iron, the propellant in aerosol sprays creates a buildup on non-stick surfaces that is difficult to remove and degrades the coating over time. Use a brush with oil or wipe the plates with a paper towel lightly coated in oil.
The factors that produce crispier waffles: oil in the batter (vegetable or canola oil, 2 to 3 tablespoons per batch, produces a crispier exterior than butter); replacing some all-purpose flour with cornstarch (1/4 cup cornstarch per cup of flour produces a crunchier crust); separating egg whites, beating to stiff peaks, and folding into the batter (produces a lighter, crisper exterior shell); using a higher browning setting. The waffle iron's role: consistent high heat that dries the batter surface quickly before the interior deflates. A preheated iron at maximum temperature produces crisper waffles than one that was partially warmed.
